Whitewater Brownies

Well, as you all know, with daylight savings time, we had an extra hour this weekend. So, the combination of the extra hour & a rainy Sunday created the perfect storm for brownies. Usually my go-to is the Ghirardelli brownie mix from Costco (the undisputed king of brownie mixes), but I had the time, so I didn’t make just any brownies…I made Whitewater brownies. They are from the National bestselling cookbook “Whitewater Cooks” by local chef & former film set caterer, Shelley Adams. It is richest, softest, most chocolatey brownie you’ll ever have. According to the book, they were Mel Gibson’s favourite while he was filming “Bird on a Wire” in Vancouver, so they have Hollywood’s seal of approval.
Here’s how to make it yourself…
- 8 ounces semi-sweet chocolate
- 1/4 cup butter
- 2 large eggs
- 1/2 cup brown sugar
- 2 tsp vanilla
- 5 tbsp sour cream
- 3/4 cup flour
- 1 tsp baking powder
- 1/2 cup semi-sweet chocolate chips
Melt semi-sweet chocolate & butter together in a double boiler over warm water. Let cool slightly.
In a large bowl, whisk together eggs, brown sugar & vanilla until just blended. Add melted butter & chocolate & blend again. Blend in sour cream, then add flour & baking powder until just incorporated. Finished with chocolate chips. Pour into grease 8″ x 8″ pan.
Bake in a 350F degree oven for 20-25 minutes.
…& voila!
^^ now just try to resist eating them all at once! I may or may not be eating one right now while writing this…let’s call it “inspiration”.
